Pat the fillets dry and season with salt and pepper. Ensure your pan is very hot (this will ensure a crispy crust) and add oil. Place the fillets skin-side down and sear for about 6-8 minutes, depending on how thick the piece of fish is. Flip once you see that the flesh has lightened about 3/4 of the way up the fish.
Add one 6 to 8-ounce, skin-on salmon fillet, with the skin side down. Cook for 3 minutes over high heat to brown the skin, spooning some of the melted butter over the top of the fish as it cooks. Transfer the pan to oven. Roast until fish is just cooked through, 8 to 10 minutes.

The cooking time for frozen salmon on the grill may vary depending on its thickness. As a general rule, cook the frozen salmon for approximately 8-10 minutes per inch of thickness. Ensure the internal temperature reaches 145°F (63°C) for safe consumption.
Finish cooking. Flip the filets over, move to the indirect heat side of the grill, and close the lid of the grill. Cook for an additional 6-8 minutes, or until the internal temperature of the fish reaches 145 degrees F and flakes easily with a fork.
Preheat your grill to 170 degrees over indirect heat, using pecan wood. Keep the salmon on the cooling rack and place in the grill and let smoke until internal temps reach around 140 degrees. This will take around four hours. Each hour while the salmon is on the grill, brush maple syrup on the fillets, coating the top and sides.

Continue cooking the fish in the oven for 2 to 3 minutes for pink inside, 5 minutes for medium, and 7 minutes for well done. Remove the fish from the pan, and let rest for 2 minutes, to finish
Add about 1 tablespoon of butter and 1 tablespoon of avocado oil to the griddle surface and spread it around a bit with your spatula.
